Délicieux Banana Bread { recette américaine du fameux pain à la banane }

Préparation : 20 min environ
Cuisson : 50 min à 1 heure



   Ces derniers temps, je tombais souvent sur la recette du fameux Banana Bread, typiquement américain, et comme j'adore découvrir ou redécouvrir les recettes anglo-saxonnes, je me suis donc lancée et bien qu'ayant d'autres recettes en stock, encore une fois, je suis allée consulter le site CrazyforCrust de Dorothy, une mine de belles recettes sucrées américaines.





  Légèrement sucré grâce aux bananes bien mûres, entre le cake et le pain avec sa mie bien dense, le Banana Bread alimentera votre petit-déjeuner ou votre goûter tout simplement. Vous pouvez aussi le déguster au repas avec un plat exotique ou aigre-doux par exemple.




Pour un pain familial , il vous faut :


- 220 g de sucre en poudre (ou 200 g de cassonade) + 2 à 3 c. à soupe de sucre en poudre pour le moule
- 100 g de beurre salé (ou demi-sel) ramolli + un peu pour le moule
- 2 à 3 bananes bien mûres (un peu tigrées c'est l'idéal)
- 2 gros œufs
- 7 c. à café de lait fermenté (que l'on peut aussi faire plus ou moins soit-même en laissant reposer le lait agrémenté d'1 c. à thé de vinaigre blanc pendant 10 min)
- 1 c. à café de levure chimique
- 260 g de farine tamisée
- 50 g de noix (noix, noisettes, noix de pécan) (facultatif)
- 2 pincées de sel (facultatif, uniquement si vous utilisez du beurre doux)






  • Préchauffez votre four à 180°c (th. 6), si besoin.


  • Beurrez l'intérieur d'un moule à cake puis saupoudrez de sucre en poudre, le sucre va accrocher au beurre et donner ainsi une belle croute au pain de bananes.


  • Votre beurre doit être assez mou pour être travaillé, versez-le dans un saladier et fouettez-le avec le sucre pour qu'il devienne bien crémeux puis réservez.


  • Dans un autre saladier, mélangez les bananes écrasées, les œufs, le lait et la levure.


  • Versez la moitié de la préparation à la banane dans la préparation au beurre, ajoutez la moitié de la farine et mélangez bien. Puis ajoutez le reste de préparation à la banane et l'autre moitié de la farine et mélangez à nouveau jusqu'à l'obtention d'une consistance homogène. Ajoutez à ce moment-là les noix (pour ma part, n'aimant pas ça, j'ai préparé une version basique du banana bread).


  • Versez la préparation dans le moule à cake et enfournez pour 50 min à 1h. Vérifiez la cuisson en plantant la lame d'un couteau sans dent qui doit ressortir sèche ou tout simplement un cure-dent qui doit ressortir sans miette (ce qui évite de faire des entailles sur le dessus...).


  • Au niveau de l'aspect visuel, pas de panique, le banana bread sera foncé et bien croustillant à l'extérieur, avec une belle fissure sur le dessus, l'intérieur sera clair et vous donnera l'impression de ne pas être assez cuit mais il le sera n'ayez crainte. 


  • Laissez refroidir complètement avant de démouler.














  • Preheat oven to 375°F. Grease a 9x5x3” loaf pan with butter and coat it with sugar. (You do this like you would grease and flour a pan. Grease it first, then add about 2 tablespoons sugar to the pan and move the pan side to side until the bottom and sides are coated with sugar. Do NOT substitute cooking spray for the butter. You can skip the sugaring and just use cooking spray, if you wish.)
  • Cream butter and sugar with a hand mixer. Set aside.
  • Add bananas, eggs, milk, and baking soda to a blender jar and blend until smooth.
  • Pour half the banana mixture into the butter mixture with 1 cup of flour. Mix with hand mixer until just incorporated, then add the remaining banana mixture and flour. Mix until just incorporated. Stir in nuts if using them. Pour into prepared pan.
  • Bake for 50-60 minutes until a toothpick comes out with just a few crumbs. The edges will be a dark brown and there will be a nice crack down the center.
  • Cool completely before removing loaf from pan, but you can cut slices from the pan after it’s cooled for about 15-20 minutes.
